I use the pasta machine to make my own freshly extruded pasta dough. I went out to a local pasta shop for a box of pasta shells, so I have a good reference for measuring the amount of dough I need to make. The Imperia pasta machine works very well for the job. I didn't expect it to be as good as the Marcato, but it is.
The Imperia has adjustable cutting boards on both sides so you can control the thickness of the noodles. The adjustable cutting boards are useful when you are making fresh pasta dough. The cutting boards also make it easy to cut the dough into any size noodles you want to make. The Marcato has a single cutting board.
The pasta is extruded with a pasta extruder and formed to the desired shape. Once formed, the pasta is placed on a drying tray and the drying tray is closed. The drying tray is heated to a temperature of 200°F, which is high enough to cook the pasta.
I'm absolutely thrilled with this product. I think that you're going to love it. If you're looking for an economical way to make great-tasting pastas, I highly recommend that you check out this pasta maker from Cucina Pro. 827ec27edc
